Sauté onion over medium heat for 7-8 minutes, like 3 teaspoons broth for a no oil version
Add carrot, garlic, cumin, and paprika when onion is translucent. Stir and sauté for 1 minute
Add broth, diced tomatoes, and lentils - bring to a boil, cover, reduce heat, and simmer for 30 minutes until lentils are tender
Add orzo and simmer for 10-15 minutes
Add spinach, heat for a few minutes. Finish with salt and pepper
