Grate the zucchinis and squeeze out as much liquid as possible using a clean kitchen towel.
In a bowl, combine zucchini, oats, Parmesan, egg, olive oil, oregano, thyme, garlic powder, salt, black pepper, and parsley. Mix well.
Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper. Spread the mixture into a thin, even layer (about ⅛ inch thick). Sprinkle sesame seeds on top if using.
Bake for 20–25 minutes until the edges begin to brown.
Remove from the oven and cut into squares or rectangles with a pizza cutter or knife. Return to the oven and bake for another 10–15 minutes until crispy and golden.
Let the crackers cool completely to crisp up. Serve with hummus, yogurt dip, or your favorite spread.
