Ingredients:
In a pan, combine the dried elderberries, lemon slices, cinnamon sticks, and water.
Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low and let the mixture simmer uncovered for about 30 minutes.
Strain the mixture through a fine mesh strainer or cheesecloth, pressing down on the solids to extract as much liquid as possible.
Stir in the honey until dissolved. Adjust the amount of honey to taste, depending on your sweetness preference.
Meanwhile, in a bowl add ½ cup of cold water and gradually sprinkle the unflavored gelatin powder over it, letting it pre-hydrate.
Add the hot syrup (If necessary, heat it up again) to the bowl with gelatin, stirring constantly to prevent clumps.
Continue stirring until the gelatin is completely dissolved and the mixture is smooth.
I greased the silicone mold with cooking spray to make it easier to remove the gummies later. Carefully pour the mixture into silicone gummy molds. Place the molds in the refrigerator and let the gummies set for at least 30 minutes (depending on the size of the mold), or until firm. Once set, remove the gummies from the molds and store them in an airtight container in the refrigerator for up to two weeks.
