Split Pea Stew
  1. Notes: 1x makes about 2.5-3L. Choose your pot accordingly. Instead of sausages, this can also be made with a ham hock (cook with soup, then cut off meat and add back in).

  2. In separate bowl, soak split peas in water for at least 2 hours

  3. Dice the bacon. Peel, clean, and chop the vegetables.

  4. Render the bacon in the pot; remove the crispy bacon pieces with a slotted spoon and set aside

  5. Lightly sauté the carrots, celeriac, and leek in the fat

  6. Add peas with the soaking water and bay leaves

  7. Bring to a boil over high heat; skim off any foam from the surface if necessary

  8. Reduce heat and simmer gently for 30 minutes with the lid slightly open

  9. Add the potatoes and cook for another 30 minutes

  10. Add the frozen peas, bacon pieces and, if desired, the sausages (whole or cut in slices); cook for another 10 minutes

  11. Finely chop the marjoram, add it, and let steep for 2 minutes

  12. Season to taste with salt, pepper, if desired add some beef bouillon cubes/paste for heartier taste

  13. Sprinkle parsley on top before serving
