  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it.

  2. In a large mixing bowl, mash the ripe bananas until smooth. Add eggs, blended cottage cheese, maple syrup, and vanilla extract. Whisk together until fully combined.

  3. In another bowl, mix almond flour, baking soda, and cardamom. Combine with wet ingredients and stir until just blended.

  4. Gently fold in one cup of blueberries. Pour batter into prepared loaf pan and scatter extra berries on top.

  5. Bake for about 50 minutes, covering loosely with foil after 30 minutes to prevent overbrowning.

  6. Cool for 10 minutes in the pan, then transfer to a wire rack. Allow to cool completely before slicing.
