Coat the duck in the five-spice and pop half a lime in the cavity. Transfer to the air fryer and cook at 180°C (350°F) for 1 hour.
After 20 mins of cooking, carefully tip some of the oil from the air fryer basket into a bowl for you to discard safely, brush the duck in some of the oil but don’t over do it.
Once done, allow the cooked duck to rest for 15 mins. Use a knife to cut the meat from the bone, then use two forks to roughly shred it up.
While the duck is resting, steam the pancakes (you can do this in the microwave), slice the spring onions lengthways and cut the cucumber into thin matchsticks.
Serve the pancakes alongside the shredded duck, spring onions, cucumber and hoisin sauce.
