Preheat oven to 375°F and line a baking sheet with parchment paper
Blend cottage cheese, eggs, and seasonings until smooth
Stir in mozzarella, cheddar, and parmesan
Spread into 2 thin rectangular “bread” shapes on the sheet
Bake 18–22 minutes until set and golden
Let cool slightly, then flip one piece, add extra cheese inside, top with second piece
Pan sear like a grilled cheese until crispy on both sides
