Adana Kebab
  1. Mix all the given ingredients in mince except fresh parsley/ coriander and knead very well for 5-10 min until very well combined

  2. Wrap with cling film and Refrigerate for an hour

  3. Once you wanna make kebabs, add fresh coriander (/parsley), it keeps its nice green colour

  4. In Preheated oven, At 220* Celcius, top grill for 5-6 min on one side and 6-7 min on other side until nice golden colour, don't overcook

  5. Put some green chillies, onion while grilling and serve them with kebabs. Also parsley and onion mixed with seasonings (sumac, salt, pepper) is served with kebabs to enhance the flavour

  6. Traditionally meat is made fine using special cleaver knife but here i ground the meat in meat grinder

  7. For even perfect results use lamb and beef in 1:1 i.e 50%lamb nd 50%beef

  8. Wash the meat not the mince

  9. You can BBq directly as well as grill in oven. Dont overcook kebabs as it leads to dryness. It should not be more than 12-15 min
