Dice pancetta and cook until crispy
Brown Italian sausage in the same pot
Sauté diced onion, carrots, and celery until softened
Add minced garlic and cook until fragrant
Stir in tomato paste and cook for 1-2 minutes
Deglaze with dry white wine if using
Add chicken bone broth, beans, rosemary, thyme, bay leaves, and Parmesan rind
Simmer until flavors meld
Stir in Italian seasoning and Calabrian chili paste
Add sun-dried tomatoes and fresh spinach or kale
Stir in half-and-half or cream at room temperature
Add freshly grated Parmesan and lemon juice
Season with salt and black pepper to taste
Serve with additional Parmesan on top
