Tuscan White Bean & Sausage Soup
  1. Dice pancetta and cook until crispy

  2. Brown Italian sausage in the same pot

  3. Sauté diced onion, carrots, and celery until softened

  4. Add minced garlic and cook until fragrant

  5. Stir in tomato paste and cook for 1-2 minutes

  6. Deglaze with dry white wine if using

  7. Add chicken bone broth, beans, rosemary, thyme, bay leaves, and Parmesan rind

  8. Simmer until flavors meld

  9. Stir in Italian seasoning and Calabrian chili paste

  10. Add sun-dried tomatoes and fresh spinach or kale

  11. Stir in half-and-half or cream at room temperature

  12. Add freshly grated Parmesan and lemon juice

  13. Season with salt and black pepper to taste

  14. Serve with additional Parmesan on top
