Em’s Chocolate Chip Cookies
  1. Heat the oven to 375°F. In a large bowl, beat the butter, both sugars, vanilla and eggs with an electric mixer on medium speed (or with a wooden spoon) until light and fluffy. Stir in the flour, baking soda and salt (the dough will be stiff). Stir in the chocolate chips and nuts.

  2. For each cookie, scoop dough with a ¼-cup dry-ingredient measuring cup. Using the back of a knife or a metal spatula, level the dough even with the top of the cup. Push the dough of ungreased cookie sheet with a spoon or rubber spatula, place cookies 2 inches apart. Flatten slightly with a fork.

  3. Bake 12 to 15 minutes or until light brown (the centers be soft). Cool 1 to 2 minutes on cookie sheets, then remove cookies to a cooling rack, using a turner. Cool cookie sheets 10 minutes between batches.
