Cut chicken breasts into bite size chunks and add to a bowl with Greek yoghurt, tandoori curry powder, cumin, coriander, garam masala, garlic puree, salt, pepper, lemon juice and red food colouring. Mix until chicken is coated.
Air fry chicken for 12-14 minutes at 180°C until cooked through.
Grab brioche baps and add to an oven proof dish. Add mozzarella slices, cooked chicken, then top with diced tomatoes and fresh coriander mix.
Add the top of the buns and brush with garlic butter.
Air fry at 180°C for 3-4 minutes until the cheese is melted. Serve and enjoy.
