Spiced Apple Crumble With Ginger Custard
  1. Preheat the oven to gas mark 4 or 180 degrees C

  2. In a saucepan, add the diced apples, white sugar, cornflour, chai masala mix, and lemon juice. Stir together and cook on low heat for 10-15 minutes to caramelise the apples and infuse the flavour

  3. In a separate bowl, add the oats then sieve in the flour. Add the brown sugar and mix through, breaking up any lumpy bits

  4. Add the melted butter and mix once more

  5. Mix with your hands so everything is well incorporated, leaving some clusters for a crumbly texture

  6. Add the apple mixture to a baking tray, then sprinkle the crumble mixture over the apples and ensure everything is covered

  7. Place the tray in the oven and bake for 30-35 minutes until golden and bubbling

  8. Allow it to rest for 5 minutes

  9. Heat 1 tsp of ghee in a pan. Add a few slices of fresh ginger and cook for 20-30 seconds

  10. Add 500g of store-bought custard and stir. Bring up to heat and simmer for a few minutes until smooth, silky, and infused with the ginger flavour

  11. Serve the crumble with a topping of custard
