Mix together the ingredients for the dumpling sauce and set aside
To make the filling, add the ground chicken, garlic, ginger, cabbage, scallions, egg, salt, pepper, sesame oil, and soy sauce to a bowl and mix
In a separate small bowl, mix the cornstarch with 2 Tbsp water and then pour it into the meat and mix again
Place 1 Tbsp filling in the middle of each dumpling skin
Preheat a large pan over medium heat and add 1 Tbsp oil per batch
Working in batches, place the dumplings meat side down on the pan and press down with a spatula to flatten the meat
Cook 2-3 minutes per side until golden brown and crisp
Repeat, adding oil to the pan before each batch
Serve dumplings with shredded cabbage, a slice of Fresno chili if using, and dumpling sauce drizzled on top
Eat the smash dumplings like a taco and enjoy
