Thai Red Curry Dumpling Soup
  1. Sauté 1 diced onion and minced garlic in 2 tbsp veggie oil

  2. Add 2 tbsp Thai red curry paste, 1 cup coconut milk (or almond milk + 1 tbsp corn starch), 3.5 cups water, 2 tbsp soy sauce, 2 tbsp fish sauce, and 1 tbsp chili oil

  3. Stir in ginger, garlic, and onion powder to taste

  4. Add 2 packs of udon noodles, 10 frozen chicken dumplings, and 1 chopped bok choy

  5. Garnish with coriander and crunchy garlic chili oil and serve
