Sweet Potato Apple Muffins
  1. Preheat oven to 400°F. Grease a 12-cup muffin tin.

  2. Mix dry ingredients (flour, baking powder, salt, cinnamon, ginger, nutmeg, cloves) in a large bowl.

  3. In another bowl, beat sweet potato puree, yogurt, egg, olive oil, and honey/maple syrup until smooth.

  4. Make a well in dry ingredients, pour in wet mixture, stir gently until just combined (don’t overmix). Fold in diced apples.

  5. Mix streusel: rapadura + flour + melted butter.

  6. Fill muffin cups ⅔ full. Sprinkle each with streusel.

  7. Bake 15-20 minutes until golden and springy.
