Preheat oven to 400°F. Grease a 12-cup muffin tin.
Mix dry ingredients (flour, baking powder, salt, cinnamon, ginger, nutmeg, cloves) in a large bowl.
In another bowl, beat sweet potato puree, yogurt, egg, olive oil, and honey/maple syrup until smooth.
Make a well in dry ingredients, pour in wet mixture, stir gently until just combined (don’t overmix). Fold in diced apples.
Mix streusel: rapadura + flour + melted butter.
Fill muffin cups ⅔ full. Sprinkle each with streusel.
Bake 15-20 minutes until golden and springy.
