Chicken Taco Bowl
  1. Add all rice ingredients to a pot or rice cooker and cook rice as normal. Fluff and enjoy.

  2. Combine all marinade ingredients in a bowl.

  3. Marinate boneless, skinless chicken thighs for 1 hour, up to overnight.

  4. Grill or smoke the chicken until cooked through. Let rest and then chop into bite sized pieces.

  5. Blend all cilantro lime crema ingredients together, thinning with milk or water as needed to reach desired consistency.

  6. Prepare pickled onions by covering thinly sliced red onion in lime juice and a pinch of salt, then refrigerate for a couple of hours.

  7. Thinly slice red bell pepper and sauté with salt, pepper, and avocado oil.

  8. Rinse and drain black beans.

  9. Assemble bowls with cilantro lime rice, marinated chicken, cilantro lime crema, pickled onions, sautéed red bell pepper, and black beans.
