Mash the beans until mostly broken down but still a bit chunky.
Mix through the onion, shallot, soy sauce, nutritional yeast and salt.
Spoon onto tortillas and press down slightly.
Cook bean-side down in a pan with a little oil for 3–4 minutes until crispy or bake at 200°C for 15 minutes until golden.
Mix everything together until thick and creamy for the tzatziki.
