Creamy Tomato And Goat Cheese Baked Gnocchi
  1. Preheat oven to 425 F.

  2. Add gnocchi, tomatoes, sun-dried tomatoes, garlic, shallot, and a pinch of salt to a large baking sheet.

  3. Toss in 2 tbsp of the sun dried tomato oil, and then nestle in the goat cheese in the center.

  4. Transfer to the oven, and bake for 15-20 min until gnocchi starts to get golden and tomatoes are soft.

  5. Once everything has baked, mix the melty goat cheese into the gnocchi, and then mix in the white beans, a handful of arugula, and 1 tbsp of the sun dried tomato oil.

  6. Serve warm with a pinch of red pepper!
