Preheat oven to 425 F.
Add gnocchi, tomatoes, sun-dried tomatoes, garlic, shallot, and a pinch of salt to a large baking sheet.
Toss in 2 tbsp of the sun dried tomato oil, and then nestle in the goat cheese in the center.
Transfer to the oven, and bake for 15-20 min until gnocchi starts to get golden and tomatoes are soft.
Once everything has baked, mix the melty goat cheese into the gnocchi, and then mix in the white beans, a handful of arugula, and 1 tbsp of the sun dried tomato oil.
Serve warm with a pinch of red pepper!
