Make the pepperoncini oil first: Heat ⅓ cup olive oil in a medium saucepan over medium heat
Add ½ cup finely diced pepperoncini and 3 sliced garlic cloves to the oil and sauté until aromatic, about 2 minutes
Remove from heat, season with salt and pepper, and let cool completely
Season 1 lb shrimp with salt and pepper
Add 2 tbls of the cooled pepperoncini oil to the shrimp and let marinate for 10 minutes
Heat a skillet over medium-high heat
Sauté the shrimp until pink and curled, about 2 minutes on each side
Remove shrimp from heat and add to a bowl
Pour the additional 2 tbls pepperoncini oil over the shrimp
Add 2 tbls pepperoncini juice and ¼ cup chopped parsley
Stir well and serve
