Pepperoncini Shrimp
  1. Make the pepperoncini oil first: Heat ⅓ cup olive oil in a medium saucepan over medium heat

  2. Add ½ cup finely diced pepperoncini and 3 sliced garlic cloves to the oil and sauté until aromatic, about 2 minutes

  3. Remove from heat, season with salt and pepper, and let cool completely

  4. Season 1 lb shrimp with salt and pepper

  5. Add 2 tbls of the cooled pepperoncini oil to the shrimp and let marinate for 10 minutes

  6. Heat a skillet over medium-high heat

  7. Sauté the shrimp until pink and curled, about 2 minutes on each side

  8. Remove shrimp from heat and add to a bowl

  9. Pour the additional 2 tbls pepperoncini oil over the shrimp

  10. Add 2 tbls pepperoncini juice and ¼ cup chopped parsley

  11. Stir well and serve
