Heat your fry pan and teaspoon some chilli oil then sprinkle over some mozzarella cheese.
Place a rice paper sheet on top and some more mozzarella around the edges.
Flatten it and let it sizzle.
Crack your egg in the middle and then break the yolk after a minute.
Sizzle for a few minutes and then fold it in half.
Once golden and your egg is fluffy inside it’s ready.
