Preheat oven to 400°F and line a baking sheet with parchment paper.
Dip each rice paper wrapper into the beaten egg just until soft (not soggy).
Layer the wrappers and shape into a round.
Optional: cut or press a small hole in the center for a bagel shape.
Brush a little extra egg on top and sprinkle generously with everything seasoning.
Bake for 8–12 minutes until golden and crispy.
Check around 8 minutes to avoid over-browning.
Let cool for 2–3 minutes it crisps up even more as it cools.
