Blend carrots, oil, eggs and sugar till smooth and emulsified (about 5 minutes)
Add apple cider vinegar and vanilla, blend
Sift all dry ingredients into a bowl
Mix drys into wet until just combined
Pour into a greased and floured bundt pan
Bake at 325F for 50-60 minutes
Let cool in the bundt for 10 minutes then turn onto a wire rack
Cool for 1-2 hours
Make brigadeiro by combining condensed milk, cocoa powder, salt and butter
Cook brigadeiro on the stove until thick
Pour brigadeiro over cake and add chocolate vermicelli sprinkles
Serve and enjoy with family and friends
