Brazilian Chocolate Carrot Cake With Brigadeiro
  1. Blend carrots, oil, eggs and sugar till smooth and emulsified (about 5 minutes)

  2. Add apple cider vinegar and vanilla, blend

  3. Sift all dry ingredients into a bowl

  4. Mix drys into wet until just combined

  5. Pour into a greased and floured bundt pan

  6. Bake at 325F for 50-60 minutes

  7. Let cool in the bundt for 10 minutes then turn onto a wire rack

  8. Cool for 1-2 hours

  9. Make brigadeiro by combining condensed milk, cocoa powder, salt and butter

  10. Cook brigadeiro on the stove until thick

  11. Pour brigadeiro over cake and add chocolate vermicelli sprinkles

  12. Serve and enjoy with family and friends
