Baby Pea & Carrot Fritters
  1. Add all the ingredients to a bowl and mix well. Gently mash the peas with the back of a fork.

  2. Heat some olive oil in a skillet over medium-low heat. Scoop 1 tablespoon of batter for each fritter and cook until the underside is golden brown (adjust the heat if they brown too quickly).

  3. Flip and cook on the other side.

  4. Let them cool slightly before serving.
