Melt your chocolate. You can do this gently in a heatproof bowl set over simmering water or in the microwave.
In a separate bowl, whip 250ml of the cream.
Pour 150ml of cream into your melted chocolate and stir until fully combined.
Gently fold the chocolate mixture into your whipped cream using a spatula. Do this in batches and work slowly to keep it light and fluffy.
Spoon or pipe the mousse into pretty glasses or bowls and smooth the top.
Top with a dollop of extra whipped cream and a sprinkle of grated chocolate.
You can put them in the fridge for at least 2 hours to set or grab a spoon, and dive in immediately.
