Julienne the scallions.
Season the fish fillet with a pinch of salt.
Slice half of the ginger and julienne the other half.
In a small bowl, mix the soy sauce, 1 tsp sugar, and 1 tbsp water.
Place the fish fillet in a steamer and steam for 8-10 minutes until cooked through.
Transfer the steamed fish to a plate and top with the julienned ginger and scallions.
Drizzle the soy sauce mixture over the fish.
Serve with the ginger scallion sauce on the side.
Notes.
Ginger scallion sauce
Blitz in food processor/chopper until desired texture.
Pour into hot pan and cook until fragrant.
Use hot, but refrigerate leftovers.
