Chicken Zucchini Poppers
  1. Preheat oven to 400°F / 200°C. Line a baking sheet with parchment paper or lightly grease.

  2. In a large bowl, combine ground chicken, grated zucchini, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.

  3. Scoop tablespoon-sized portions and roll into small balls. Place evenly spaced on the baking sheet and lightly brush with olive oil.

  4. Bake for 18–22 minutes, turning once halfway, until golden and cooked through (internal temperature 165°F / 74°C).

  5. For extra crispiness, broil for the final 2–3 minutes if desired.

  6. Mix all dipping sauce ingredients in a small bowl and chill until ready to serve.
