Spinach Artichoke Pastina
  1. Sauté shallot in butter with a pinch of salt, black pepper and red pepper flakes until softened, about a few minutes

  2. Stir in uncooked acini di pepe

  3. Pour in chicken broth and season with a pinch of salt

  4. Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally

  5. Once pasta is just about tender, stir in grated garlic, chopped spinach, and chopped marinated artichoke

  6. Stir in cream and let simmer for about 1-2 minutes to thicken

  7. Add cream cheese, Gruyère cheese, and Parmesan cheese, stirring until melted and creamy

  8. Finish with lemon zest and juice, then season to taste with salt, pepper and red pepper flakes

  9. Serve immediately
