Chicken Fajita Mac & Cheese
  1. Cook macaroni in salted boiling water until al dente. Drain and set aside. Save ½ cup pasta water.

  2. Toss chicken with all fajita seasonings (chili powder, smoked paprika, cumin, onion powder, garlic powder, salt & pepper).

  3. Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through (5-7 minutes). Set aside.

  4. In the same skillet, cook sliced peppers and onion until softened and slightly charred (5-6 minutes). Set aside.

  5. In a pot, melt butter. Stir in flour and cook for 1 minute.

  6. Gradually whisk in milk and cream. Simmer until thickened.

  7. Stir in shredded cheddar, Monterey Jack, smoked paprika, and salt. Mix until melted and smooth.

  8. Add cooked pasta to cheese sauce. Fold in cooked chicken and sautéed vegetables.

  9. Stir until everything is coated in cheese sauce. Add pasta water if sauce needs thinning.

  10. Optional: Top with extra cheese and broil for 2-3 minutes for a golden bubbly finish.

  11. Garnish with cilantro, jalapeños, or lime and serve.
