Add your leek, courgette, spring onions, garlic and onion to a large saucepan with some olive oil, over a medium to high heat. Fry for 2-3 minutes.
Next, add the rest of the ingredients into the pan, stir well and then allow the pot to simmer for around 15 minutes, until it reaches a more creamy texture.
When ready, serve and garnish with more parmesan and some fresh thyme and enjoy!
