Beat 3 eggs in a bowl
Pour in ½ cup water and add salt and umami-laden condiment
Chop up the white part of 1 scallion and add it to the egg mixture
Pour the mixture into a small earthenware or heavy-bottomed pot that has been coated with sesame oil
Cook over medium heat, stirring until the eggs are set
Reduce heat to low and cover the pot, allowing the eggs to steam for 5-7 minutes
Remove from heat and garnish with the green part of the scallion, sesame seeds, and a drizzle of sesame oil
Serve with rice
