Mediterranean-style Chickpea And Chicken Salad (no Mayo + Meal Prep Friendly!)
  1. Dump the chickpeas into a large bowl and mash with a potato masher or fork until most of them are mashed but not puréed.

  2. Add the cooked chicken, roasted red peppers, olives, and sun-dried tomatoes to the bowl with the mashed chickpeas and stir together.

  3. In a large glass measuring cup or a small bowl, combine the ingredients for the dressing. Whisk.

  4. Pour the dressing over the salad and toss to coat everything. Taste and adjust seasoning if needed.

  5. Chill in the fridge for at least 15 minutes to let the flavors soak in.

  6. Enjoy scooped up with chips, over a bed of greens (highly suggest arugula!) or tucked into a pita.

  7. Store leftovers in an airtight container in the fridge for up to 4 days.
