This is adapted from P's mom's cookbook. We added sifting the batter from Adeena Sussman's book.
Lightly beat eggs and milk
Add the butter
Add salt and flour
Sift the batter again
In a greased pan, spoon in a little batter tilting the pan to spread it thinly and evenly over medium heat until the batter just sets.
Flip over and cook for 5 seconds before transferring to plate
Lauren recommends letting cool and then freezing between sheets of wax paper. Can be reheated in the microwave for 10 - 25 seconds.
