Preheat your oven to 240°C.
Place the pork roast in the oven and cook for 30 to 40 minutes, or until the crackling looks amazing. Be prepared to open a window and turn on your exhaust fan, as this can produce quite a bit of smoke.
After the crackling time, reduce the oven temperature to 180°C.
Continue cooking the roast for an additional 30 minutes for every 500g of meat. For example, a 2kg roast will need two more hours after the initial crackling.
Once the roast is fully cooked, drizzle some honey over the crackling and return it to the oven for 5 more minutes.
Remove the roast from the oven, cover it with foil, and let it rest for at least 15 to 20 minutes before carving.
