Reuben Soup
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 5 minutes.

  2. Stir in the flour and cook for 1-2 minutes, stirring constantly, until lightly golden.

  3. Slowly whisk in the chicken or beef broth, ensuring no lumps. Stir in the heavy cream and bring to a gentle simmer.

  4. Add the sauerkraut, corned beef, Dijon mustard, and caraway seeds (if using). Let the soup simmer for 10-15 minutes, stirring occasionally, until flavors meld together.

  5. Gradually stir in the shredded Swiss cheese until fully melted and the soup is creamy. Season with salt and black pepper to taste.

  6. Ladle the soup into bowls. Garnish with fresh parsley and serve with rye bread croutons or slices on the side.
