Tahini Date Chickpea Blondies
  1. Preheat oven to 350F

  2. Soak ½ cup pitted dates in hot water for 15mins, then drain.

  3. Blend the dates with 1x 540ml can of rinsed/drained chickpeas, ½ cup tahini, 1 tsp salt and 1 tsp vanilla - until smooth.

  4. Fold in chocolate chips (as much as your heart desires), and spread place evenly in a parchment lined loaf pan.

  5. Top with more chocolate chips and bake in the oven for 30mins at 350F.

  6. MUST let cool for at least 15mins to firm up before slicing.
