In a food processor, combine all ingredients except for the flour. Blend until the mixture is very smooth, stopping occasionally to scrape down the sides.
Add the flour and pulse just until it is incorporated.
Using a tablespoon, scoop out portions of the mixture and roll them into balls. If the mixture is too sticky, add a little more flour; if it's too dry, add a bit of water, as the moisture in lentils can vary.
Flatten each ball slightly and place them on a plate. Continue shaping the rest of the patties.
In a medium skillet, heat olive oil over medium heat. Add the patties and cook for about 4 minutes on each side, pressing down gently when you flip them.
Serve the patties warm with your choice of dips.
For baking, preheat the oven to 375°F and line a baking pan with parchment paper. Place the patties on the pan and bake for 20-22 minutes, or until they are lightly browned.
For air frying, preheat the air fryer to 375°F. Arrange the patties in the tray and cook for 10-12 minutes. Spraying the tops with olive oil before cooking will help them brown more.
