In a large bowl, combine the puréed strawberries, Greek yogurt, and optional coconut milk or coconut cream until smooth.
Add vanilla extract and maple syrup to taste, depending on how sweet you’d like it.
Stir in the chia seeds until fully combined.
Pour the mixture into glasses or jars, filling almost to the top.
Microwave the chocolate chips in 20–30 second intervals, stirring between each round until melted and smooth.
Pour a very thin layer of melted chocolate across the top of each glass to create a shell. Sprinkle with flaky sea salt if desired.
Refrigerate the glasses for about 30 minutes, or until the chia seeds thicken and the chocolate shell is set.
