Chop shrimp finely until it becomes mushy and sticky. Add to a bowl along with salt, white pepper, sesame oil, and cornstarch.
Divide into 2 equal parts and shape into two patties.
Pour flour, add 1 egg, and panko breadcrumbs onto a plate each. Coat shrimp patty into the flour, then coat into egg mixture, then lastly coat it in the panko breadcrumbs. Repeat for the second patty.
Heat oil in a frying pan or small pot. Fry panko crusted shrimp patties until golden brown and crispy (around 3-4 mins on each side).
Lightly toast the bread slices. While it's toasting, mix together cut up boiled eggs and tartar sauce in a medium bowl.
Top bread with a very generous handful or two of Magic Broccoli Microgreens, egg salad tartar sauce, then shrimp cutlet. Add another slice of bread and cut in half before serving.
