Preheat oven to 425°F.
Slice each chicken breast in half horizontally to make 8 thin cutlets.
Pat chicken dry and lightly coat each piece with mayo or yogurt - not too thick.
In a bowl mix: panko, parmesan, garlic powder, paprika, salt + pepper.
Press chicken into breadcrumb mixture really well.
Place on a parchment-lined sheet pan and spray/drizzle tops with olive oil.
Bake: 12–15 minutes
Flip
Bake another 5–8 minutes
Broil 1–2 minutes at the end for extra crispiness.
