20 Minute Oven Baked Crispy Chicken Cutlets
  1. Preheat oven to 425°F.

  2. Slice each chicken breast in half horizontally to make 8 thin cutlets.

  3. Pat chicken dry and lightly coat each piece with mayo or yogurt - not too thick.

  4. In a bowl mix: panko, parmesan, garlic powder, paprika, salt + pepper.

  5. Press chicken into breadcrumb mixture really well.

  6. Place on a parchment-lined sheet pan and spray/drizzle tops with olive oil.

  7. Bake: 12–15 minutes

  8. Flip

  9. Bake another 5–8 minutes

  10. Broil 1–2 minutes at the end for extra crispiness.
