In a bowl mix dry rub ingredients (3-12) together and rub over meat
Marinate for at least 2 hours, longer is preferable
In pressure cooker add onion, garlic, maple syrup, honey, apple cider vinegar, liquid smoke and stock to the pot. If baking in oven, preheat oven to 350F and place above ingredients into a baking dish with a tight fitting lid.
Place meat on top (use pressure cooker tray) and pressure cook for 75 minutes or bake for approx 3-4 hours in oven
Allow to naturally release/sit in oven dish for 15 minutes
Remove brisket to an oven tray, cover and allow to rest
Add ketchup, mustard and brown sugar to sauce and thicken on stove top (may need to blend)
Spoon/brush some sauce over the brisket and broil until sauce begins to caramelize
Slice brisket and serve with BBQ sauce
