Crispy Quinoa Salad
  1. Cook quinoa in chicken stock

  2. Mix cooked quinoa with sesame oil

  3. Spread quinoa mixture on lined baking tray

  4. Bake at 180°C for 35-40 minutes until golden and crispy, mixing 3 times throughout

  5. Chop cucumber, avocado, shallots and prepare edamame beans

  6. Mix peanut butter, soy sauce, honey and boiling water together to desired consistency

  7. Combine crispy quinoa with cucumber, avocado, shallots and edamame beans

  8. Pour dressing over salad

  9. Mix, serve and enjoy
