Chop cucumber, avocado, shallots and prepare edamame beans
Mix peanut butter, soy sauce, honey and boiling water together to desired consistency
Combine crispy quinoa with cucumber, avocado, shallots and edamame beans
Pour dressing over salad
Mix, serve and enjoy
