Andes Mint Chocolate Chip Cookies
  1. Heat butter, brown sugar and water in saucepan until butter is melted

  2. Remove from heat and add chocolate chips, stirring until melted

  3. Pour into a large bowl and cool for 10 minutes

  4. Mix eggs into chocolate mixture

  5. Add flour, baking soda and salt and stir just until blended

  6. Chill dough for 1 hour

  7. Preheat oven to 350 degrees

  8. Line cookie sheets with parchment paper or silicone baking pads

  9. Roll dough into 1 inch balls and place 2 inches apart on cookie sheet

  10. Bake cookies for about 11 minutes until small cracks form and look slightly wet inside

  11. Remove from oven and immediately place an Andes mint on each cookie

  12. After mints melt, swirl each one with an offset spatula or spoon

  13. Remove cookies from cookie sheet and let cool until chocolate is solid
