Using your hands, massage together the lemon zest and sugar for about 1 min to release the oils.
Add the sugar/lemon zest to a saucepan with the lemon juice, water and raspberries.
Heat until the sugar is dissolved and the raspberries are softened (~5-7 min), stirring often, then remove from the heat & let cool to room temperature.
Strain the lemonade mixture through a fine mesh sieve and chill in the refrigerator until very cold.
For one drink: Pour the lemonade over ice and top with ginger beer. Stir, then enjoy!
