Boil your green veg for a minute or two, until just cooked, drain well & cool.
Beat eggs in a bowl.
Add baking powder to flour & mix well.
Add eggs to flour mixture, season with salt & pepper, add cheese (cheddar works equally well here, but we are cottage cheese & feta fanatics, likewise, parmesan!)
Line a spring form 22cm baking tin, add a splash of olive oil, arrange some of the veg on the bottom of the tin, spoon over with the ‘cake’ mix, arrange remaining veg on top, add tomato slices & chopped rosemary.
Bake in oven at 180C fan for around 30 - 35 mins, until skewer comes clean, you can flash it under a v hot grill for a couple of mins if you like.
Remove from heat, cool in tin for 5 mins, eat warm, room temperature or cold.
