Hashbrown Casserole
  1. Soak potatoes in cold water for 1 hour

  2. Add soaked potatoes to cold water in a large pot on the stove. Season heavily with salt

  3. Bring to a boil then drop to simmer, cook until tender

  4. Drain and pat dry. Set aside

  5. Saute onion in butter until browned, add garlic and cook 2 minutes

  6. Add flour and cook 2 minutes

  7. Slowly pour in hot stock while whisking

  8. Add thyme, nutmeg, S&P

  9. Cook while whisking until thickened

  10. Add cream, whisk in and cook for 3 minutes

  11. Turn off heat, whisk in sour cream

  12. Once mixed add potato and stir until fully coated

  13. Pour into an oven safe container, top with cheese, bake at 375f for 55 minutes or until golden and bubbly

  14. Enjoy
