Preheat the oven to 180 degrees (fan assisted)
In a large bowl mix the eggs, feta, mixed herbs and veg until well combined then transfer to a grease proofed baking dish
Bake for 25-30 minutes or until golden and set
Slice your bagels and slice the frittata into 4, add to the bagels with a slice of mozzarella then brush over with the herby oil
Bake for a further 5-10 minutes
Leave to cool before wrapping in foil or baking paper
Freeze for up to 3 months or store in the fridge for up to 3 days
Reheat in the air fryer from the fridge at 180 degrees for 8 minutes or from frozen at 180 degrees for 12-14 minutes just try and wrap in foil to stop the bagel from toasting too much or microwave from the fridge for 60 seconds full power or 2 minutes from frozen, just wrap in a damp paper towel!!
