  2. Add onion, celery, and carrots and saute over medium-low heat until they are translucent (8-10 minutes).

  3. Add garlic and cook for another 1-2 minutes until fragrant.

  4. Add liquid to the pot and bring to a boil.

  5. Add chicken and spices and reduce heat to a simmer.

  6. If adding rice or potatoes, add them at this point.

  7. Simmer the soup until the chicken is cooked through, stirring occasionally.
