Mix flour, yeast, and salt in a bowl.
Add warm water and mix into a soft dough.
Knead 8–10 mins until smooth and springy.
Cover + rise for 1 hour (or until doubled).
Divide into 8 balls. Roll into 3–4mm thick circles.
Rest 10 mins while the oven preheats to 240°C (as hot as it goes) with a tray inside.
Bake 2–3 mins until they puff up like balloons 🎈
Wrap in a tea towel to keep them soft.
