Fluffy Pita Bread
  1. Mix flour, yeast, and salt in a bowl.

  2. Add warm water and mix into a soft dough.

  3. Knead 8–10 mins until smooth and springy.

  4. Cover + rise for 1 hour (or until doubled).

  5. Divide into 8 balls. Roll into 3–4mm thick circles.

  6. Rest 10 mins while the oven preheats to 240°C (as hot as it goes) with a tray inside.

  7. Bake 2–3 mins until they puff up like balloons 🎈

  8. Wrap in a tea towel to keep them soft.
