Heat the base – Warm a non-stick frying pan over medium heat. Add the hot honey and let it bubble slightly.
Add the cheese – Sprinkle grated mozzarella evenly over the honey. Let it begin to melt and form a golden, gooey layer.
Crack in the eggs – Gently crack the eggs over the cheese. Season with salt and pepper, then cover the pan with a lid to cook the eggs until the whites are just set and yolks are cooked to your liking.
