High-protein Low-fat Blueberry White Chocolate Scones
  1. Preheat oven to 400 degrees

  2. Combine flour, baking powder, salt, and butter in a large bowl and mix with your hands, pushing the flour into the butter with your fingers

  3. Add cottage cheese, eggs, honey and vanilla to a blender and blend until smooth

  4. Add the blended mixture to the bowl with dry ingredients and mix until about ½ combined

  5. Sprinkle in white chocolate chips and frozen berries, continue mixing until just combined

  6. Sprinkle flour on counter and dump dough out, push together into a circle without over-mixing

  7. Cut dough into 8 pieces and lay on a sheet tray with parchment paper

  8. Brush milk onto the tops of scones

  9. Bake for 15-18 minutes until lightly browned on top
